All ingredients for Marinade can be purchase from Trader Joes. Great with Couscous and grilled Asparagus with Balsamic Vinegar and Salad.


1 large piece FRESH Salmon. Cut in 2-4 pieces. ( Size equal to individual serving size.)

Two Options

Buy bottle of Island Teriyaki at Trader Joe’s it is very similar to the marinade below.


Make your Own Marinade

2 Tbsp brown sugar

2 tsp. Honey

1 Tbsp. Unsalted butter

4 Tbsp. Dijon mustard

2 sauce

2 Tbsp. Olive Oil

4 tsp. Grated fresh ginger or Crushed fresh ginger in the jar!


In a small sauce pan melt all ingredients together.

Let cool.

Set each cut piece of salmon on it’s own large piece of Heavy Duty Aluminum Foil. (Enough foil to completely wrap salmon)

Coat the salmon with the marinade.

Wrap the salmon in foil, careful to completely close the wrapping and have all seams on top.

Marinate for minimum of 4 hours.

Prepare grill or Bar B Que.  Medium High Heat.

Set wrapped salmon, seam side up on center of grill.  Do not turn, do not open foil for at least 10 minutes.  Then begin to check for doneness.  The fish should flake easily and should be opaque in color all the way through.  The time of cooking depends on the size and thickness of the piece of salmon.  I have had pieces cook in 10 minutes and some cook in 20 minutes.


Easy preparation option: Purchase the salmon fresh, immediately go home and prepare the marinade and prepare the salmon as above.  Once the salmon is wrapped in foil with the marinade it can be placed in a ziplock bag and frozen until ready to use.  The nice thing about this is that you can freeze individual size portions and only remove what you are ready to use it.  It take about 2 hours to thaw at room temp but cook immediately or place in fridge.  Or place in fridge the night before or morning of the day you plan to use it.
